WHere is an easy take on a drink found on our latest menu. This is a batch premix which is packed with flavours of the holiday season, rendering it excellent for a holiday party. Any leftover syrup to use in morning drinks, sweets, or to mix additional servings of the drink.

Yields 10 servings
For the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Syrup: Put every items inside a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, remove from the burner and leave to cool down entirely. Transfer to a sterilised bottle, seal keeping it chilled, where it will keep for around a month.
Preparing the Premix: Mix the specified liquid ingredients into one big jug, leave to sit for 60 minutes, then filter it best through muslin, so it's perfectly clear.
When ready to serve: Add 85ml from the batch mix to a mixing glass filled with ice, and agitate gently for one minute to cool it down. Filter to a cold coupe glass or equivalent, decorate with some cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
